BROMELAIN FROM PINEAPPLE STEM

The pineapple is one of the world’s most popular tropical fruits: originating in South America, it is now appreciated on almost every continent. This fruit is increasingly recognised for its medicinal properties, in particular for a substance it naturally contains called bromelain, of which the stem (the central part of the pineapple, which is not usually eaten) is very rich.

Bromelain is a proteolytic (i.e. protein-digesting) enzyme with multiple properties. In particular, it contributes to the drainage of excess fluid, it helps improve microcirculation and counteracts cellulite.

The enzymatic activity of bromelain is expressed in GDU (Gelatin Dissolving Units), which is the amount of gelatin that one gram of bromelain can digest in one hour under specific temperature and pH conditions. This parameter is essential for standardising and quantifying the enzymatic activity of bromelain: a high GDU value indicates greater enzyme potency, which correlates with a more pronounced therapeutic effect. In general, good quality bromelain should have a titre of between 2000 and 2500 GDU/g.
